TREA Pine Honey is collected from September to November from pine trees that grow in abundance at the foot of mountain Mainalo in Vytina. It is the altitude grading from 800m to 1300m that gives its unique taste and aroma.
Once foraged by the bees and harvested from the hives, honey is being constantly evaluated as to its composition and quality. After being extracted from the combs, honey is stored in large tanks before being bottled. Finally, it is cold packed by hand without the addition of artificial additives or flavorings.
Food with Origin: Pine Honey from Mainalo Mountain – Vytina
Tasting Profile: CLASSIC – Slightly earthy flavor and mild sweetness.
Serving Suggestions: Ideal to be used in balsamic vinaigrette, to complement feta and aged cheeses, or enjoyed with roasted nuts and walnuts.
Crystallization*: it does not crystallize easily due to low sugar and water concentration.
*Crystallization is a natural phenomenon that causes pure raw honey to become thick and cloudy. Honey is a super-saturated solution of two sugars: glucose and fructose. Glucose sugar separates from water and become crystals, while fructose remains as a liquid. The best way to convert honey into smooth liquid is to apply a heating method with warm water that should not exceed 35°C, otherwise its nutritious properties will be destroyed.
