- 1 cup self-rising flour
- 1 tsp sugar
- 1 egg
- ¾ cup milk
- 50g melted butter
- lemon juice
- ½ cup blueberries
- TREA Wildflower Honey
First of all, mix together the flour and the sugar in a large bowl. Beat the egg with the milk, make a well in the centre of the dry ingredients and whisk in the milk to make a thick smooth batter. In addition, beat in the melted butter.
Heat a teaspoon of a small knob of butter in a large non-stick frying pan. Drop 1/4 cup of the batter into the pan to make each pancake. Cook for about 3 minutes over a medium heat until small bubbles appear on the surface of each pancake, then turn and cook another 2-3 minutes until golden.
Pour with a few lemon juice to make them soft and cover with kitchen paper to keep warm while you use up the rest of the batter.
Finally, serve these homemade pancakes stacked high with TREA Wildflower Honey. Garnish with the blueberries.
